Bye Bye SUMMER!!! =)

i've been awake since 5:15 am!
and normally this would bug the BEJEEZUS out of me because i hate my inner alarm clock ... but i slept sooooooooooo good last night that i don't even care. haha!
i got 7 hours of uninterrupted sleep and it felt AMMMAAAZZING!
technically i didn't get outta bed til 6:30 ... but i was watching Animal Planet ... haha! and now it's 7:15 and i've already pulled out the butter and eggs to sit out for the cupcakes and i've washed the dishes ... only cuz i needed the mixing bowl in the sink to make breakfast! lmfao!!
"... and in the morning ... i'm making WAFFLES!!" hahaha ... he cracks me up ...
oh yes ... waffles! they're amazing. lol. i'm not a breakfast person AT ALL!! give me cold pizza or a burger for breakfast any day! lmao! but the one thing that i do absolutely LOVE ...

i don't even know what makes waffles sooo good ... but ... o ... m ... g. lol.
i'm in heaven ........
ok ... back to baking! holy moly ... haha ... as you read in the previous post ... today i'm attempting S'More Cupcakes. =)
and yes ... i'm using Wally World brand of chocolate cuz this baker is on a BUDGET! ... honestly ... they ran out of Hershey's bar packs. lol. and i had to improvise ... and i just didn't feel like going to a different store to find them ... pretty sure they'll taste just as good ...
These cupcakes are the perfect way to shove Summer out the door and on it's way. lol. only thing i personally like about Summer is that my birthday is in June. other than that ... i'd be perfectly fine without it. lol. if i had to choose between living in Death Valley or Alaska ... i would choose Alaska. lol. give me snow over hot weather ANY DAY!! you can always ... ALWAYS put on more clothes or wrap up in TEN BLANKETS  when you're cold ... put on 5 pairs of socks ... there's only so much clothing you can take off in hot weather ... and be decent to walk around in public. lol.
" ... you can be my tan-legged Juliet ... i'll be your redneck Romeo ... " JASON ALDEAN is AMMMAZZING! i saw him in concert this year and it was by far the BEST concert i've been to EVER!
and yes ... I took this picture! =) this is my favorite one from that night ... definitely a night that will never be forgotten ...
sorry ... i did it again ... haha!! i'm telling you ... i get sidetracked pretty easily! =P
ok ... i think my eggs and butter have sat out long enough ... i need to finish making the waffles first.
it's 8:53 am and i finished making the waffles ... i made the graham cracker bottom to my cupcakes ...
yumm ... lol ... then i started making the batter ... the recipe i used for my Devil's Food Cupcakes actually says to stir the dry ingredients together ... but i always sift mine ... i think the texture of the cupcake comes out better the more you sift. haha ...
after i mixed together the butter ... sugar ... eggs ... and vanilla ... i started adding the flour mixture ...
then the milk ...
looks kinda nasty ... haha ... i know ... but the end product is DELICIOUS! lol ... and i do believe that they call them Devil's Food cuz they're soooo good that they're EVIL! haha ... look at this yummy batter! and it is yummy ... i tried it ... shhhhhhhh ... don't tell mom! haha!!
and on top of the graham cracker it goes!!
after that i added a couple marshmallows to the top and tried pushing them as far down into the batter as i could ...
i obviously didn't put them down enough ... hahahaha ... oh well ....
they look yummy already!! =) haha ...
i placed a square of chocolate on the top of the cooling cupcakes so that the squares would melt themselves ...
its working!! =)
on the next batch i tried something a little different ... hopefully this way will be better ... haha ... i put the marshmallows on the bottom ... well ... on top of the graham cracker ... but under the batter. lol
next batch i'm gonna put marshmallows in the middle ... and sprinkle graham cracker crumbs on top and see how those come out ... haha!
when i opened the oven after the third set was done ... i will admit that my mouth dropped. haha! they looked like a MESS!! but yummy at the same time! lol
and now the frosting ... hmm ... gonna try and melt some marshmallows in a pot on the stove to mix in with my buttercream frosting ... eeek ... i have a feeling this is gonna make a mess! lol
NO MESS!! YAY!! haha ... the frosting doesn't necessarily taste like marshmallows but it COUNTS! lol. cuz there's marshmallows in it! lol.
and TA-DA!! =)

Yummy Graham Cracker bottom ................
who wants one?! cuz i am NOT eating all these by myself! haha ...

Devil's Food Cupcakes

3/4 cup butter
3 eggs
2 cups all-purpose flour, sifted
3/4 cup unsweetened cocoa powder
1 1/4 tsp baking soda
1/2 tsp salt
2 cups sugar
2 tsp vanilla
1 1/2 cups milk

1. Allow butter and eggs to stand at room temp for 30 minutes. Line 24-30 muffin cups with paper baking cups. In a medium bowl sift together flour, cocoa powder, baking soda and salt. Set aside.
2. Preheat oven to 350. In a large mixing bowl beat butter with an electric mixer on medium to high speed for about 30 seconds. Gradually add sugar, about 1/4 cup at a time, beating on medium speed until combined. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Alternately add flour mixture and milk to butter mixture, beating on low speed after each addition just until combined.
3. Spoon batter into prepared muffin cups, filling each one 2/3 full.
4. Bake for 20 minutes or until wooden toothpick inserted into centers comes out clean. Cool cupcakes in muffin cups on wire racks for 5 min. Remove and let cool completely. Frost with desired frosting =)
5. ENJOY!

i started this post at 7:10 this morning ... and it is now 11:21 am ... hahaha! what can i say?! i like to blog and bake at the same time ... haha!!! my friend should be getting here within the next hour ... and we're gonna watch Bridesmaids! I finally get to watch this movie that everyone is saying is HILARIOUS! We'll see! haha ...
