Mummy Dearest ....

tomorrow we're having a Halloween Potluck at work and i decided to ... ya know ... bake something! lol. as usual ... hahaha! i was a little inspired by Halloween ... who wouldn't be?! These were some of the easiest cupcakes i've made! and they came out sooo cute!
aaaahh! super cute! lol. i kinda tried to turn the cupcake batter a dirty greenish brown in the spirit of Halloween. lol. didn't come out exactly how i wanted but oh well ... they're still yummy. lol.
CUPCAKE TOWER! =) hehehe ... i love it.
i ALMOST had a knife go thru my hand while baking today ... lol. i managed to only get a cut but lets just say it could've been a LOTTT worse! lol. now i'm gonna sit back and relax for a little bit then get up and make dinner ... lol. not as fun as baking but tastes almost as good. =)

Vanilla Cupcakes

2 3/4 cups all-purpose flour
2 1/2 tsp baking powder
3/4 tsp salt
1 cup unsalted butter, softened
2 cups sugar
4 eggs
1 tsp vanilla extract
1 cup milk, preferably whole

1. preheat oven to 350. in a bowl, combine flour, baking powder and salt. Set aside.
2. in a mixer bowl fitted with paddle attachment, cream butter and sugar until light and fluffy, about 2 minutes. add eggs, one at a time, beating well between each addition. beat in vanilla. using a wooden spoon, stir in flour mixture alternating with milk, making three additions of flour and two of milk, just until blended.
3. scoop batter evenly into prepared muffin tins. bake in preheated oven until toothpick inserted into center comes out clean, about 18-20 minutes. let cool in tin on a wire rack for 10 minutes before transferring to rack to cool completely.

Brownie Attack!

k so ... you know how you end up in a mood for something sweet and chocolatey ... kinda like comfort food even tho you don't need to be comforted???? lol. that's how i am right now ... so i was flipping thru one of my recipe books and came across a brownie recipe that i just so happened to have everything to make them! LOVE LOVE LOVE when that happens. lol.

tomorrow is gonna be pretty busy .... i got cupcakes to make for my aunt ... she requested anything that contains the Brown Sugar Cream Cheese Frosting that i made the other day ... haha! so i'm gonna try the Devil's Food Cupcakes with the frosting and see how those come out. my other project is making Mummy Cupcakes for my Halloween Potluck Monday at work. lol. should be fun!!
Here's these beauties!!! =)

Brownie Cups

6 tbsp butter or margarine, melted
3/4 cup sugar
1/2 tsp vanilla extract
2 eggs
1/2 cup all-purpose flour
1/4 cup cocoa powder
1/4 tsp baking powder
Dash of salt
Powdered sugar to dust on top

1. Heat oven to 350. Line small muffin cups with paper bake cups. Stir together butter, sugar and vanilla in medium bowl. add eggs; beat well with spoon.
2. Stir together flour, cocoa, baking powder and salt; gradually add to butter mixture, beating with spoon until well blended. fill muffin cups 1/2 full with batter. sprinkle powdered sugar over top.
3. bake 12-15 minutes or until wooden pick inserted in center comes out clean. Cool slightly; remove brownies from pan to wire rack. cool completely.
4. ENJOY! (i know i will ... hahaha!!)

Happy Hallo ... i mean .........

HAPPY BIRTHDAY!
haha ... i made these cupcakes for a coworker's son's birthday to take to his class. =)
awesome Halloween cupcake liners ....
i love Halloween ... ok ok ... i love candy ... haha!
i've already bought 2 bags of candy to "TAKE TO WORK" ... and yea ... the first bag didn't make it very long in my house ... didn't help that they were tootsie rolls. MY FAVE! lol. i still have majority of the second bag to take to work on Monday. haha!!
i was going for the Pumpkin Patch approach ... it started to work ... but then the frosting started to get warmed up from being held in my hand for so long ... i made it work tho. =)

Cinnamon Roll Cookies!!

cookies are amazing ... enough said. lol
my little cousin calls them "tookies" ... i love her! =)
today i decided to make Cinnamon Roll Cookies ... cuz honestly ... who doesn't like cinnamon rolls?!
i've managed to make Cinnamon Roll Cupcakes and omg. AMAZING! i think they're better than the ones they sell at the fair ... they're that good.

see the swirls of cinnamon and brown sugar?? and do i even need to mention the Homemade Cream Cheese Frosting?! These are pure heaven. lol
it's actually kinda weird ... my nose is really sensitive to certain smells ... i'll get an instant headache ... and cinnamon is actually one of those smells ... BUT only in like Apple Cinnamon lotions or body sprays ... stuff like that ... i absolutely LOVE LOVE LOVE the smell of cinnamon baking in the oven! it is one of favorite my smells ever!
on a different note ... one of my best friends from high school just left my house ... we've known each other for 8 years and for 4 years of that time he's been overseas fighting for our country and he just got back home! YAAAYYY!!! =) he's been the brother i never had and has always been there for me ... even if he wasn't really here. and all i wanna say is thank you. =)

while ive been typing this ... the dough to my cookies has been in the freezer so that i can get ready to flatten it. fingers crossed that these come out ok .........
wow ... i reeeeeeeeeeeeeaaaaaaallly need to invest in a rolling pin! lol.
tho it's not baking without getting your hands dirty a little bit! haha!!
i rolled the dough out and then spread the butter on ....
then came the brown sugar and cinnamon ... and knowing me ... i didn't follow the recipe at all and added a lot more brown sugar and cinnamon. HA! the more the merrier right?! lol.
after this i kinda fought with the wax paper cuz the dough was kinda sticking ... but guess who won?!
ME!!!! Bwahahaha!!!!
it may not be rolled pretty but it's rolled! lol.
oooooh yeeesss ... =) pretty proud of myself right now. lol. i've never made swirlie cookies.

Cinnamon Roll Cookies
Recipe adapted from Sing For Your Supper

For the cookies:
1 cup (2 sticks) unsalted butter, softened
1/2 cup brown sugar
1/2 cup sugar
2 eggs
1 teaspoon vanilla
2 teaspoons cinnamon
3 cups flour
2 teaspoons baking powder
1 teaspoon salt

For the filling:
1/4 cup (1/2 stick) unsalted butter, very soft
1/4, plus 2 tablespoons packed brown sugar
2 teaspoons cinnamon

For the icing:
2 cups confectioners’ sugar
2 tablespoons melted butter
1/2 teaspoon instant espresso powder
2 teaspoons vanilla
2-4 tablespoons milk

To make the cookies:
In a medium bowl, combine the flour, cinnamon, baking powder, and salt; set aside.

In a large bowl, or the bowl of a standing mixer, cream the butter and sugars together until light and fluffy. Add the eggs one at a time, and beat until just combined. Add vanilla. Scrape the sides of the bowl, then add half of the flour mixture and mix until just combined. Add the remaining flour mixture and beat until thoroughly combined, scraping the bowl as needed. Scrape the dough into a ball in the center of the bowl, cover with plastic wrap, and chill in the freezer for 30 minutes, or the refrigerator for at least an hour.

Once the dough is chilled, divide it into two equal halves. Place one half back in the bowl and put it back in the refrigerator for now. On a large piece of plastic wrap, pat the first half of the dough into a rectangle about nine inches by twelve inches, and about half an inch thick. Place half of butter on the dough and spread it all the way to the edges. Sprinkle half of the brown sugar evenly over the buttered dough and press the sugar into the dough. Finally, sprinkle half of the cinnamon evenly over the dough. Use the plastic wrap to tightly roll the dough into a log. Place the log in the freezer for 30 minutes or the refrigerator for at least an hour. Repeat with the remaining half of the dough and filling ingredients.

Preheat the oven to 350 degrees. Line a baking sheet with Silpat mats or parchment paper.

After the dough has chilled again, slice each log into half inch slices (about 24 per log). Place on the prepared baking sheets and bake for 10 to 12 minutes. Transfer to a wire cooling rack and allow to cool completely before icing.

To make the icing:
In a medium bowl, combine the butter and instant espresso powder. Add the confectioners’ sugar and vanilla and whisk until it just comes together. Next, add the milk, one tablespoon at a time until the desired consistency is reached. It should be thin enough to drizzle, but thicker than a glaze.
With the cookies on a wire cooling rack set over parchment paper, drizzle the icing over the them with your whisk. Allow the cookies to set up for a few minutes before stacking or storing.

(i didn't use the espresso powder in my icing cuz i don't really like coffee ... but you can add whatever flavor icing you would like ... or none at all ... cuz these puppies are good just by themselves too!!)

i LOVE brown sugar!!

i love baking with brown sugar ...
i also love baking with cream cheese ...
and today ... i found a recipe for a Brown Sugar Cream Cheese Frosting!
lmfao!!! i couldn't resist!
earlier i went to the store and grabbed another cake mix for $1 ... oh yes ... ONE DOLLAR! lol. perfect. =)
before i started making the cupcakes ... i opened the cupboards and tried to decide what leftover cupcake liners i wanted to use. then i saw some that i hadn't even opened yet!! and i love them!!! =)
so i decided to use these! i love animal prints! my house is actually decorated in giraffe print. =) lol
they're AWESOME!! lol.
onto the frosting .......
unsalted butter ...
cream cheese ....
vanilla ....
and brown sugar!!!
i do believe that this is one of my favorite frostings now ... lol. wow.
kinda thinking this frosting would've gone better on chocolate cupcakes but they taste pretty good on white cupcakes too! lol

Brown Sugar Cream Cheese Frosting

1/2 cup unsalted butter, room temperature
1 package (8 oz) cream cheese, room temperature
1 cup packed light brown sugar
1 tsp. vanilla extract

Combine butter, cream cheese, brown sugar and vanilla in bowl and beat at a medium speed until smooth.


now i gotta find something to eat for lunch ... hmm ...

Lemon + Cream Cheese = Happiness

it's been awhile since i've baked using a cake mix.

i normally try to make everything from scratch ... but these sounded too good to not make exactly how the recipe says.

Lemon Cheese Bars ... or more like Lemon Cheese Slices ... only cuz i don't have a 13x9 inch glass pan. lol. i used what i had and used a 9 inch springform pan! haha!! so they'll be cut more like a cheesecake and not in bars.

oh well tho ... they'll taste the same either way.
i do believe this is the only thing that i've baked recently where i did NOT taste as i prepared ... lol. these bars slices get thrown together soo incredibly fast and only takes a total baking time of half an hour. lol.
cake crumbs pressed into the bottom to make the crust .....
mmmmm ... i love lemon! and yes ... yet again ... Wally-World brand ... lol.
... cream cheese ... egg ... sugar ... lemon juice ...
mmmmmmmm ... lemon cream cheese. lol.
lemon cream cheese mixture spread over the baked crust .......
and add the cup of crumbs saved ....
and VOILA!!!

back in the oven it goes for another 15 minutes!!!
TA-DA!! perfectly browned on the top ... =)
it was a little crispy around the edges ... ok ok ... on the bottom too ... lol. i guess i baked it a little too long ... oh well. practice makes perfect right?! =)
despite it being a tad burnt ... it was actually pretty good! lol.
my lil seester asked if i could make her famous by putting her picture on here eating this deliciousness ... so here it is ... lol
"This is my 'savorment' face!" <--- her exact words. lmao!! she even asked if "savorment" was a word ... and even tho it's not ... lol ... you all get the picture. =) hahahaha!!

this is definitely gonna be one to try and not burn make again and hopefully get it right the next time ...

Lemon Cheese Bars Slices

1 package white or yellow cake mix with pudding in the mix
2 eggs, divided
1/3 cup vegetable oil
1 package (8 oz) cream cheese
1/3 cup sugar
1 teaspoon lemon juice

1. Preheat oven to 350.
2. Combine cake mix, 1 egg and oil in large bowl, stir until crumbly. Reserve 1 cup crumb mixture. Press remaining crumb mixture into ungreased 13x9 inch baking pan. Bake for 15 minutes or until light golden brown.
3. Combine remaining egg, cream cheese, sugar and lemon juice in medium bowl; beat until smooth and well blended. Spread over baked crust. Sprinkle with reserved crumb mixture.
4. Bake 15 minutes or until cream cheese layer is just set. Cool in pan on wire rack. (i baked mine an additional 5 minutes ... this might be why it was a little crispy)

Green Velvet!! Yup ... GREEEEN!!! =)

i actually got this idea from The Baker Chick's blog! She's got some really awesome stuff! you should go check it out. =) she among a couple others are ones i bow down too. haha!! i didn't use her cupcake recipe but i did try her Chocolate Frosting Recipe as I've never made frosting like that ... it was realllly good!
i found a recipe online for some Red Velvet Cupcakes but substituted red food coloring for green. =)
and yes it takes the WHOLE bottle!!

Finger Lickin' Good!!!!

Green Velvet Cupcakes

1/2 teaspoon salt
1 cup butter, softened
2 cups sugar
4 eggs
1 cup sour cream
1/2 cup milk
1 bottle (1 ounce) green food coloring
2 teaspoons vanilla

1. Preheat oven to 350. Mix flour, cocoa powder, baking soda and salt in medium bowl. Set aside.
2. Beat butter and sugar in large bowl with electric mixer on medium speed until light and fluffy. Beat in eggs, one at a time. Mix in sour cream, milk, food color and vanilla.
3. Gradually beat in flour mixture on low speed until just blended. Spoon batter into 30 paper-lined muffin cups, filling each cup 2/3 full.
4. Bake 18-20 minutes or until toothpick inserted into cupcake comes out clean. Cool in pans on wire rack 5 minutes.
5. Frost with desired frosting.
6. Enjoy!

Finally watched Bridesmaids tonight ... plans didn't go accordingly a couple days ago when i was supposed to watch it. it was ok ... it had it's funny parts but people were making it sound waaaaaaaaaaaaay more funny than it really was. lol.
